Cold summer soup with beets and kefir

Ingredients:

Kefir 400-500 g Beet 1 pc.

Cucumber 1 pc.

Radish 4-5 pcs. Egg 1 pc.

Iceberg lettuce 1 bunch Dill 1 bunch Salt to taste Preparation:




1. Prepare the ingredients.

2. Boil the beets, cool, peel and cut half into small cubes. Put in a salad bowl.

3. Cut the cucumber into small cubes and add to the beets.

4. Slice radishes and add to vegetables.

5. Lettuce leaves narvite hands or finely chop (as you like), finely chop the dill. Add half of the dill with the salad to the rest of the previously cooked vegetables and mix.

6. The remaining beets are coarsely chopped, add the kefir, previously left, finely chopped dill and salt.

7. Beat with a mixer until smooth and saturated color.

8. Boil the egg and cool, cut in half.

9. Pour the kefir-beet dressing into the serving plates and add the mixed and pre-cut vegetables.

10. Decorate the dish with boiled egg halves and a sprig of greens.

11. Summer dietary and perfectly refreshing soup is ready!
